Childhood Memories – ‘Pappa al pomodoro’


Afternoon by the sea – Tuna, soya, Puntarelle salad
Out to pick the springtime jewels – Millefoglie of zucchini, mint, ricotta cheese, leeks
Hugs from the sea bed – Scallop, pancetta, caramelized fennel, anis, cardamom


When we raised the glasses at Baricci’s – Veal tartar, artichokes, grape fruits
No meat, but lots of Love – White onions, parsley, lentils, goat ricotta cheese
Following the Footprints – Wild boar, spinach, lemon, pine nuts, sun dried plums


Where the sea meets the mountains – Risotto of green peas, shrimps crumble
Leguminious – Ditali-pasta, Trasimeno beans, octopus-bruschetta


Andrea spells t-e-n-d-e-r – Deer, spring onion, rucola, pancetta, sauces of rucola, tomato and mustard


Scooping the freezer at Zio Manchino’s – Pear sorbet
